I recently got an iPad with the goal of replacing my laptop on firm trips. I have been pretty victorious in traveling with only my iPad for the most part, and it is all due to the following applications.
Ipad
Dropbox
I use this app to keep my files synchronized over all of my devices. Because of this app, I only got the 16gb version of the iPad. The app allows me to access all of my files in the cloud, as well as saving documents I originate on the iPad directly into my Dropbox account. This is admittedly the most leading app I have on my iPad.
Evernote
I have written about this app before, it is my brain in the cloud. This let's me keep all of my notes accessible where ever I am. With the recently released Trunk apps, Evernote is only going to get more valuable.
Webex
I do a lot of consulation calls and presentations online, and this app is invaluable. Not only can you associate and view a Webex presentation, you can also associate to the audio call over the iPad!
Quickoffice
This is my go to app for creating documents. I have not used the Apple apps with the irregularity of Keynote, but Quickoffice works great! I can view, edit, and originate documents and spreadsheets with ease, and with a Bluetooth keyboard, it is just as easy as a laptop.
Logmein Ignition
There is all the time the opening that I will need access to Internet Explorer, and for that I just associate back home to the ole laptop. I have weened myself off of most of my laptop connections, but if something ever comes up, this app works seamlessly.
In addition to these add-on apps, the included mail, calendar, and contacts are great replacements for the desktop versions. Of course I can't forget the WordPress app, the one I am creating this post with! Let me know in the comments if you have come over any apps you can't live without.
